Who does not like chili? I question people who do not enjoy a nice hot bowl of chili. To me, it is comfort food at its finest. You can have your meatloaf and mashed potatoes. I will take my chili. Of course, chili and adding lean muscle mass do not always work so well together, so here is a chili chicken recipe that will satisfy any chili enthusiast.
Chicken Chili Ingredients
– 4 Boneless Chicken Breasts
– 1 tbsp Coconut Oil
– 1 small Onion, chopped
– 1/4 lb Fresh Mushrooms, sliced
– 4 oz can Chopped Green Chilies
– 4 oz Pepper-Jack Cheese, shredded
– Seasoning to taste (I.E. Chili Powder, Paprika)
Chicken Chili Directions
Grill chicken and set aside.
Saute onions and mushrooms in coconut oil until the onions are tender.
Stir in chilies.
Place chicken on a baking sheet or shallow baking pan.
Top with mushroom mixture, then with cheese.
Bake at 350º about 5-10 minutes until the cheese has melted.
