Everyone loves peanut butter, right? I use peanut butter as a cheat snack, or when I could use a little extra fat in the diet. For those times, I love these no-bake peanut butter cookies. As the title says, there is no baking required, so it does not get any simpler than this protein cookie recipe.
This no-bake recipe packs a punch of flavor and protein without even needing an oven. These cookies hold up for days and can even be made ahead in bulk and frozen and thawed out easily. As a result, this is a recipe that I like to make a few times a year.
No-Bake Peanut Butter Protein Cookie Ingredients
1 cup chocolate or vanilla whey protein
1/2 cup raw honey
1 cup natural peanut butter
1 cup organic quick-cooking oats
No-Bake Peanut Butter Protein Cookie Directions
Combine whey, peanut butter, oats and honey in medium bowl.
Mix until it gets thick enough for molding.
Shape into balls the size of a tablespoon.
Lightly flatten each so that it takes the shape of a cookie (makes about 24).
