Protein Pumpkin Pancakes

Pumpkin Treat Packed With Protein

Pumpkin is not just for Halloween. It can also be used to make some tasty protein pancakes without the guilt. I love these pancakes post-workout or as a late-night snack. Other protein pancake recipes use wheat flour (or a similar flour), which loads up on carbs. These protein pumpkin pancakes are very tasty and loaded with flavor.

Ingredients:
1 cup 100% canned pumpkin
1/2 cup liquid egg whites
1/4 cup water
1 scoop protein powder
2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp ginger
1/8 tsp allspice
1/8 tsp nutmeg
Natural sweetener (to taste) (optional)

Directions:
Mix canned pumpkin, liquid egg whites, water and protein powder to create a batter.
Stir in the baking powder, cinnamon, ginger, allspice, nutmeg and optional natural sweetener.
Pour the batter on to a hot pan coated with non-stick cooking spray and cook on medium heat 3 minutes per side.
