Quinoa is a grain-like crop grown primarily for its edible seeds that you have heard me talk about on this blog and the Mass and Shred Fitness Podcast a lot. While I love my brown rice, oatmeal and yams, I never overlook the whole grain quinoa when I need some nice carbs. Quinoa contains a full compliment of amino acids and cooks very easily, so not only is it healthy, it is quite convenient.
Take a look at this quinoa salad consisting of one of my favorite fats, salmon.
Salmon Quinoa Salad Ingredients
6 oz salmon
2 tbsp fat-free mayonnaise
1 tbsp fat-free Italian salad dressing
1/2 cup cooked quinoa
1/4 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped red pepper
Salmon Quinoa Salad Directions
Combine the chopped vegetables, mayonnaise and salad dressing.
Add in the quinoa and salmon until well blended.
